Our papaya salad draws inspiration from a Dai village restaurant in Manyuan, southern Yunnan. Crunchy strips of papaya are pounded with chili and tomato paste, then seasoned with fresh lime juice and fish sauce, and topped with peanuts for a nutty touch and added crunch. Pair it together with Crispy chicken skin, Mala prawns and steamed rice. 🍚
