Zhanyi Hot Wings

These hot wings are inspired by the Northern Yunnanese chili chicken from Zhanyi town, located about two hours north of Kunming, Yunnan's capital. Known for its intense chili kick, this dish is prepared by braising chicken in a rich chili and ginger paste until the flavors fully develop.
